Classic köttbullar with potatoes and peas
At the centre of Swedish cuisine Köttbular has consistently been recognized internationally as a staple of the country. Traditionally eaten along side potatoes, peas and lingonberry jam, which are all grown by Swedish farms, waste occurs at all stages of the value chain for each of these ingredients. In this investigation we look more closely at “ugly” potatoes, how much food is wasted to grow livestock, and how different processes for certain vegetables can actually be much less wasteful.
